Mmmmm…. yum… I’m baking. Not over-the-top-all-out-crazy baking. Just a small, yummy batch of Russian Fairy Teacakes. This time of year wouldn’t be the same without them.

Tired of making meals at home? Believe me, these are a special kind of goodness that you’ll want to make. I’m including my personal recipe. It’s so simple! I’m going to pour myself some hot tea and raise my cup to you. May your day be yummy too!

Known for generations, by a variety of names (pryaniki in Russian) these super buttery and magical cookies are a tradition in my home. My personally adapted recipe is fit to serve in the company of fairies, elves, or other magical beings.

1 cup butter, softened
1/2 cup powdered sugar
2 1/4 cups flour
1 tsp. vanilla
3/4 cup nuts finely chopped
Powdered sugar for rolling

Heat oven to 325° F.

Mix butter, 1/2 cup powdered sugar and vanilla in a large bowl. Stir in flour and nuts until dough comes together.

Shape dough into 1” balls. Place onto cookie sheet about an inch apart.

Bake 20 minutes or until set, but not brown. Remove and cool until just warm to the touch.

Roll warm cookies in powdered sugar, cool completely, then roll again in more (Yes more!) powdered sugar to fully coat.

Suggested nuts—walnuts, almonds, hazelnuts, macadamia nuts, pecans.
