I love foraging for magic. I don’t know what I’m going to find, even when I’m out in my own yard. What drops from the sky, or comes up from fresh dirt after a rain, is always magic. So when I’m foraging I’m really just opening. What I find might not be what I thought I was looking for. That’s extra special magic!

As we cycle towards Beltane under a New Moon, this week’s blog features flowers which can be eaten. You can forage for these if you’ve got things blooming which can be eaten. Pansies are one. Dandelions and clover and buds of the redbud tree too! Look up what you’re not sure about, and forage where you know the foliage is free of chemicals.

Finally, ask permission from the plants and trees before gathering. I do this by placing my hand on my heart, asking aloud or internally, for a response. My body is gently pulled forward by the energy of the living thing I’m questioning if the response is yes. If I feel a hesitation or a gentle push away, then I leave it be. Trust the messages and magic you receive.

Salads become a welcoming delight in warming weather. But think with the luscious in mind… flowers! So many blooms and petals are completely edible and make any salad a gourmet experience. Most have a slightly peppery flavor. If you lack a garden, check with friends or shop the herb section at the grocery. Some carry fresh edible blooms.

Calendula, carnations, chrysanthemums, clover, cornflower, dandelions, hibiscus, honeysuckle, impatiens, lilac, marigolds, nasturtiums, pansies, phlox, primrose, roses, violets. Remember to use plants free of chemicals.

Fresh baby greens or
butter leaf lettuce
Thinly sliced sweet onion
Grape tomatoes sliced in half
Handful of nuts of your choice
Fresh edible flowers & petals
Fresh raspberries, blueberries
or thinly sliced strawberries

1/2 cup olive oil
1/4 cup balsamic vinegar
Juice of 1/2 a lemon
1/2 tsp salt
1/2 tsp pepper
1/4 tsp honey or sugar

Prepare the dressing first by whisking all the ingredients together well and set aside. Remove a handful of flowers to a separate bowl. Prepare the rest of salad ingredients and toss gently together. Distribute onto serving plates and then arrange the rest of the flowers across the top of each salad to show off the colors and blooms. Serve the salad with the dressing on the side to preserve blooms until the last moment. Enjoy the delicious fresh beauty of blooms!
