Kim's Russian Fairy Teacakes
These teacakes, a version of the traditional pryaniki, are a cornerstone of our Yule celebrations. Their rich, buttery essence paired with a sprinkle of fairy dust (in the form of powdered sugar) makes them a beloved treat.
Ingredients
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 2 1/4 cups flour
- 1 tsp vanilla extract
- 3/4 cup nuts finely chopped (Suggested: walnuts, almonds, hazelnuts, macadamia nuts, pecans)
- Powdered sugar for rolling
Instructions
- Heat oven to 325 degrees F.
- Mix butter, 1/2 cup powdered sugar, & vanilla extract in large bowl. Stir in flour & nuts until dough starts to come together.
- Shape dough into 1" balls. Place onto cookie sheet about an inch apart.
- Bake for 20 minutes or until set, but not brown. Remove & cool until just warm to the touch.
- Roll warm cookies in powdered sugar, cool completely and then roll in more powdered sugar to fully coat.
Chocolate Dipped Shortbread
Chocolate Dipped Shortbread, a luxurious twist on a classic treat, becomes a festive Yule delicacy, with its rich, buttery base and dark chocolate coating symbolizing the indulgence and joy of the holiday season. This delightful confection is often savored during Yule celebrations, adding a touch of elegance and sweetness to the festive gatherings.
Ingredients
- 1 lb unsalted butter
- 1 cup sugar
- 4 cups flour
- 1 pkg dark chocolate chips
Directions
- Beat butter & sugar. Gradually mix in flour.
- Mold into a shape you would like, such as a long roll, or a rectangular brick. Wrap & refrigerate until firm, about an hour.
- Preheat oven to 350 degrees F. Remove & unwrap. Slice into 1/2 inch thick pieces & bake on an ungreased cookie sheet for 30 minutes, or until edges are brown.
- While shortbread cools, melt chocolate in a double boiler & stir until smooth. Dip 1/3 of each shortbread in the chocolate & place on parchment until chocolate firms.
